Now that summer's officially here I figured it would be only right to share one of my all time favourite desserts with you guys! If there's one thing I love more than ice cream and cookies - then it is both combined! Strawberry ice cream between two crispy chocolate chip cookies and et voila, there you have the perfect summer treat! This recipe is super easy and if I can do it - everyone can! I hope you enjoy!
300g self raising flour
150g softened butter
2TS vanilla sugar
2TB baking powder
2 free range eggs
50g chocolate chips
a dash of milk
1. Combine all the ingredients in a large mixing bowl (since I got my KitchenAid Stand Mixer life has gotten so much easier with baking, let me tell you) and finally add your chocolate chips to the mixture.
Roll little balls of mixture (the size of a walnut) and place them well apart on the baking tray
3. Pre-heat the oven to 200
°C and bake your cookies for 10 minutes until they're golden brown.
