Easy Chia Seed Pudding Recipe

Chia seed pudding is one of the most delicious and nutritious breakfast and/or snacks. This chia seed pudding recipe is extremely easy to re-create and perfect for meal-prepping. I personally love to make it because it’s basically fail-proof. I mean, if someone like me, who has no sense of anything in the kitchen, can make this then you definitely can!

While these chia seeds’ size are small, they pack a punch! They are able to absorb up to 9x their weight in liquid! On their own, they have almost no taste, but when combined with some form of liquid substance, they begin to have a gel-like consistency. Thus, oftentimes, people mix chia seeds into their smoothes. These seeds are low in calories, but filled with nutrition. They are loaded with anti-oxidants, all the carbs contained within are fiber, an amazing source of protein, high in omega-3 and omega 6 fatty acids (acids your body cannot produce on its own), have magnesium and calcium and more! Chia seeds are even linked to lowering risks for heart disease and better bones! Chia seeds are super heroes of foods essentially.

  • 1/2 cup chia seeds
  • 2 tbs sweetener – I used honey, but you can use maple syrup, sevia or nothing at all if you want to cut out sugar
  • 1 tsp vanilla
  • 2 cups milk – I use coconut milk because I love the creamier consistency & taste of of it; alternatives include normal milk, almond milk, cashew milk, etc.
  • toppings – this is optional, you can enjoy this on their own or top it with your choice of berries, nuts, granola

  1. Measure out all of your ingredients
  2. In a bowl or jar, mix together your milk, chia seeds, sweetener and vanilla – make sure there are no lumps of seeds or in the milk
  3. Once well combined, transfer to your desired serving bowls/cups
  4. Cover and place in fridge for at least 20 minutes – I like to keep mine overnight in the fridge to really allow it to settle & to have the seeds have the full gel-like consistency
  5. Top with desired toppings!

This chia seed pudding recipe is so easy because you can easily altar it! From the milk to the sweetener and toppings, you can truly make it your own. And if you like chocolate, simply add some cocoa powder to the mixture to make chocolate chia seed pudding! I usually double or triple this recipe for myself since it lasts throughout the week and it’s SO good I keep craving for more!

A million and one thanks for reading — until my next lil’ thought then!
